Mirror Glaze
This is a super easy and cool way to decorate a cake. You don't need to be a cake expert to make this look professional!
To cover a tall cake 9" (23cm) round you will need 1 1/2 recipe.
Ingredients
- 240 g white chocolate chips
- 1 cup sugar
- ½ cup water cold water
- 15 g powdered gelatin Unflavored
- ¼ cup water
- ½ cup corn syrup
- ½ cup condensed milk
- food coloring gel
Instructions
- Sprinkle gelatin over ½ cup of cold water and let it stand for 5 minutes to bloom. In a small saucepan add water, corn syrup and sugar. Simmer over medium heat until sugar has dissolved. Remove from heat and add condensed milk. Add to hot mixture bloomed gelatin and stir until dissolved. Add white chocolate chips to a large bowl and pour over hot mixture. Whisk vigorously. Blend mixture using a handheld blender to get rid of any remaining lumps. Run liquid through a fine mesh sieve. Liquid is now ready to be colored and poured over a chilled cake or pie.
Notes
Place ½ cup of glaze into 6 small containers add tint the glaze using food coloring gel following this proportion:
Light pink - 2 red drops
Orange - 3 and 1 red drops
Yellow - 3 yellow drops
Purple - 2 red and 1 blue drops
Blue - 2 blue drops
Green - 2 blue and 3 yellow drops Tint the remaining glaze using red food coloring to make pink. As it cools glaze will harden, if you feel it is not flowing enough to be poured heat it in the microwave for 5 seconds or less.
To avoid a mess line a baking sheet with plastic and in the center place a container to raise the cake like a pedestal.
When the glaze stops running you can trim the excess with scissors and transfer the to a serving plate.
Orange - 3 and 1 red drops

Basic White Cake
Perfect for decorated cakes, this is a fluffy but not crumbly white cake batter that is great for layered cakes, pair really well with fruit, white mousse and much more!

Ingredients
- 2 cups granulated sugar
- 250 ml milk at room temperature
- 4 egg yolks
- 4 egg whites at room temperature
- 3 tbs unsalted butter at room temperature
- 1 tbs baking powder
Instructions
- In a large bowl whip egg whites to medium firm peaks and reserve.
- In a separate large bowl whip butter, sugar and egg yolks until creamy, add milk, flour and baking powder.
- Add batter to egg whites bowl and folding gently.
- Grease and flour 2 9” (23cm) round cake pans and divide batter between them.
- Bake it at 350F (180C) for 30 to 35 minutes.
Notes
Let it cool down completely before removing from pan and slicing.
