TABBOULEH SALAD WITH QUINOA
Gluten free lebanese salad with a healthier choice replacing bulgur with quinoa, super rich in protein and texture similar to traditional tabbouleh.
Ingredients
- ½ cup quinoa washed and drained
- 2 cups water
- 4 tomatoes diced
- 1 medium onion diced
- 1 cucumber seeds removed and diced
- 1 cup fresh parsley chopped
- 1 teaspoon salt
- 45 ml squeezed lemon juice
- 45 ml olive oil
- 2 tablespoons fresh mint leaves chopped
Instructions
- In a saucepan place the water and quinoa and bring to boil. Once cooked, drain and let it cool down.
- In a deep bowl place chopped tomatoes, chopped onion, chopped cucumber, chopped parsley and chopped mint.
- Season with lemon juice, olive oil, salt and stir well.
- Add cooked and cooled quinoa and stir again.
- Correct salt and vinegar if necessary.
- Transfer to serving dish and garnish with a mint sprig.
