TABBOULEH SALAD WITH QUINOA
Gluten free lebanese salad with a healthier choice replacing bulgur with quinoa, super rich in protein and texture similar to traditional tabbouleh.

- ½ cup quinoa washed and drained
- 2 cups water
- 4 tomatoes diced
- 1 medium onion diced
- 1 cucumber seeds removed and diced
- 1 cup fresh parsley chopped
- 1 teaspoon salt
- 45 ml squeezed lemon juice
- 45 ml olive oil
- 2 tablespoons fresh mint leaves chopped
In a saucepan place the water and quinoa and bring to boil. Once cooked, drain and let it cool down.
In a deep bowl place chopped tomatoes, chopped onion, chopped cucumber, chopped parsley and chopped mint.
Season with lemon juice, olive oil, salt and stir well.
Add cooked and cooled quinoa and stir again.
Correct salt and vinegar if necessary.
Transfer to serving dish and garnish with a mint sprig.
